From the Executive Chef
Happy heatwave everybody!
I hope this letter finds you in good spirits, and that everyone is managing this lovely Arizona summer as well as possible.
Here at the school we are getting ready for our week-long-summer-shut-down so that our students can have a nice week off. The offices will remain open (except for 4th of July), but the kitchens will be quiet. Then, on Monday July 10th we’ll get it all started again with a fresh batch of AM and PM students!
This past Friday (June 23rd), several ACI students and instructors gathered together at Page Springs Cellars in northern Arizona to assist with the Henry Schuerman Charity Dinner to kick off the Tilted Earth Festival. Proceeds from the event will be going to Big Brothers/Big Sisters of Yavapai County and the Prescott Creeks organization. It was a 5 course menu featuring 5 Arizona Wineries and 5 Arizona Chefs/Restaurants. ACI provided the first course, as well as 10 pairs of hands to assist the other chefs and to serve the food. It was quite an event, and hopefully we’ll be able to assist again next year.
Our next open house will be on Saturday, August 5th. We don’t have too many details yet, but we do know we will be hosting a Veteran Bootcamp class, and Chef Eric Naddy will be serving up some good things to snack on. I know it will be hot, but we’d still love to see all of you so don’t hesitate to stop by.
There are a few other cool projects coming up, but it’s a little too early to discuss details, so keep your eyes and ears open as the year progresses and we’ll see what other fun we can get into! Stay safe, stay cool, and stay hydrated out there in those hot kitchens…I know we have a few months left, but at least June is almost over!
